Zucchini
sliced in diagonal chunks
Several carrots sliced in chunks
Sliced onions
Sliced green peppers
Dash of olive oil
Sea Salt
Chopped garlic
Slice all
veggies and place in plastic bag with a bit of olive oil, some
sea salt, and a generous amount of chopped garlic. Marinate
for an hour or as long as overnight.
Grill on
bbq. I use a wok grill, which works great and takes less time.
Serve on
whole wheat tortillas with a little veggie mayo. Or if you feel
creative, serve with a little pesto spread. My kids even enjoy
this recipe.
