Bring 4
cups of water to a boil. Add 1 cup black beans and boil for
7 minutes. Add 1 cup black-eyed peas and boil 3 minutes longer.
Meanwhile,
place in crock-pot:
4 cups water
1 chopped onion
1 chopped green pepper
1 bay leaf
1 tsp Italian seasoning
1 t sweet basil leaves
Add boiled
beans AND water to ingredients in crock-pot; turn on low and
cook overnight.
Add:
14.5 oz.
can stewed tomatoes
8 oz. tomato sauce, no salt added
10 oz. package (2 cups) frozen corn
2 T honey
1/2 t sea salt
1/4 cup butter, optional for added flavor
Cook on
low for 30 mins.
Remove bay
leaf before serving.
