4 cup dates,
chopped
5 Tbs butter, cut into small pieces
2 cup boiling water
2 eggs
3 1/4 cup flour
2 tsp baking soda
Mix dates
and butter. Cover with water. Let stand until cool. Add egg,
then dry ingredients, mixing well. Pour into greased 9x5x3"
loaf pan. Bake 40-50 min. @350.
I've never
done it, but I'm sure this recipe would make great muffins,
too. (Bake for a shorter period of time.) I think it would work
with half the butter, and you could use 4 egg whites instead
of the 2 whole eggs to further lower the fat.
