1 avocado,
chopped
1/2 red pepper, chopped
1 scallion, chopped
1 celery stalk, chopped
1 garlic clove, minced
3 Tbs lemon juice
Pinch of cayenne
Pinch of sea salt
Using a
fork, mash avocado in a small bowl. Mix in red pepper, scallion,
celery, garlic, lemon juice, salt and cayenne. Taste and adjust
seasonings. Serves 1 or 2.
