1/2 cup
vegetable oil
2/3 cup honey
2 large eggs
1/4 cup buttermilk or rice milk
or almond milk
1 tsp vanilla extract
2 cups brown rice flour
1 Tbs arrowroot powder
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp sea salt
1 cup banana, mashed
Mix oil
and honey. Add eggs, and beat well. Add milk and vanilla and
beat. Mix dry ingredients together in a separate bowl and add
alternately with mashed banana to egg mixture. Stir in chopped
nuts if desired. Pour into 2 loaf pans and bake at 350 degrees
for 50-55 minutes.
