1 cup cottage
cheese (or use soft to medium tofu)
1 cup pecan meal
1 medium onion chopped
1/2 cup "quick" cooking oatmeal
2 eggs (or egg replacer)
1 tsp salt
1 tsp dry basil
Garlic to taste
1/2 cup seasoned bread crumbs (I use Pepperidge Farm Stuffing)
Combine
eggs, cottage cheese, salt and basil. Mix well. Add the rest
of the ingredients. The mixture will be a bit wet. You don't
want it too dry. It will dry as it bakes because of the breadcrumbs,
etc. "Wet" hands and form into patties or shape into
meatballs. Fry or bake in the oven. If baking meatballs, put
them in the pan touching each other slightly.
