101 Vegetarian Recipes

Veggie Wraps

Whole wheat tortilla
1-2 Tbs hummus
Salad greens
1 carrot, cut into matchstick pieces
1/2 tomato, sliced thin

Spread hummus on the tortilla, line with salad greens; top with veggies. Roll up and enjoy. This looks very pretty. My teen daughter took this in her lunch and got comments on how good it looked.
