In Mexico,
in order to keep the guacamole from oxidizing, the pits are
put back in the bowl with the guacamole! This is great fun at
Mexican weddings, where many of them boast huge bowls of guacamole
as an apptizer and they are filled with the pits --pretty surprising
the first time you see it.
8-10 avocados
Juice from 1-2 lemons
1-2 red peppers, cut in chunks
1/2 cup chopped cilantro
1 red or yellow onion, cut in chunks
2-3 cloves garlic, cut up
Pinch of sea salt
Cayenne to taste
In food
processor, process avocados and juice from 1 lemon until smooth.
Add red peppers, cilantro, onion, garlic, salt and cayenne.
Pulse/chop
until the veggies are uniformly in small pieces. Taste and add
more lemon and salt if needed for taste and consistency. Serves
6-10.
